A google search turned up this helpful little article on substitutions for oil and butter in baking. Cally told me about a cousin of hers who pureed and froze zucchini to use as an veg. oil substitute...that sounded great to me since we have four monster zucchinis out back that I don't imagine we'll be able to use or give away all that they'll yield.
